Delight in these vibrant Grilled Veggie Skewers with a flavorful marinara sauce, inspired by classic ratatouille. Perfectly charred eggplant, zucchini, summer squash, and red onion combine for a healthy, colorful dish that’s great as an appetizer or side.

Ingredients

Vegetables

  • 1 small eggplant, sliced into ¼-inch circles
  • 1 medium green zucchini, sliced into ¼-inch circles
  • 1 medium yellow summer squash, sliced into ¼-inch circles
  • 1 medium red onion, sliced into 1 to 2-inch chunks

Seasoning & Extras

  • ¼ to ½ teaspoon kosher salt
  • Pepper, to taste
  • Olive oil spray or brush, enough to generously coat the skewers
  • 1 cup marinara sauce, warmed for serving

Others

  • Wooden skewers, soaked in water for 15 minutes

Instructions

  1. Prepare Skewers: Soak wooden skewers in water for about 15 minutes to prevent burning on the grill. Thread the sliced vegetables onto the skewers in your preferred pattern, typically alternating two slices of each vegetable to create a colorful arrangement.
  2. Season and Oil: Generously mist all sides of the vegetable skewers with olive oil spray or brush them with olive oil. Sprinkle kosher salt and pepper evenly over the veggies for balanced seasoning.
  3. Grill the Veggies: Place skewers on a medium-high heat grill for 15 to 20 minutes. Rotate the skewers several times during cooking to ensure even char and softness. The vegetables should become tender with light char marks when done.
  4. Serve: Remove the skewers from the grill and serve hot or at room temperature. Spoon warm marinara sauce over the skewers before serving to add a tangy, rich flavor that complements the grilled veggies.

Notes

  • Soaking wooden skewers in water prevents burning during grilling.
  • You can customize the vegetables by adding bell peppers or cherry tomatoes if desired.
  • If you don’t have a grill, you can use a grill pan on the stovetop.
  • Marinara sauce can be homemade or store-bought; warming it enhances flavor and texture.
  • Serve as a light main dish or alongside grilled meats or grains for a full meal.
