Paired with a crisp homemade apple cabbage slaw and served on whole wheat buns, this recipe offers a balanced, tasty option that is easy to prepare and cooks perfectly on the grill.

Ingredients

For the Burgers

  • 1/2 pound ground chicken
  • 2 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon dried rosemary (or 2 teaspoons fresh, chopped)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 green apple, grated

For the Slaw

  • 1/2 green apple, grated
  • 1/4 head green cabbage, shredded
  • 4 tablespoons mayonnaise
  • 2 tablespoons rice wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh parsley

To Serve

  • 2 whole wheat burger buns, split and toasted

Instructions

  1. Prepare Burger Mixture: In a small bowl, combine 2 tablespoons mayonnaise, 1 tablespoon yellow mustard, rosemary, salt, and pepper. Grate half of the green apple and add it to the bowl. Stir well to combine all ingredients.
  2. Mix in Ground Chicken: Add the ground chicken to the mayonnaise and apple mixture. Mix gently but thoroughly to combine, taking care not to overmix to keep the burgers tender.
  3. Form Patties: Divide the chicken mixture into two equal portions and shape each into a patty. Set the patties aside while preheating the grill.
  4. Grill Burgers: Cook the patties over a low flame on the grill for 5-7 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) for safe consumption. Remove burgers from the grill once fully cooked.
  5. Make the Slaw: While the burgers cook, grate the remaining half of the apple and thinly slice the cabbage. In a serving bowl, whisk together mayonnaise, rice wine vinegar, salt, and pepper. Add the grated apple, shredded cabbage, and chopped parsley, tossing to combine evenly. Allow the slaw to sit for a few minutes to develop flavor.
  6. Assemble Burgers: Place each burger patty on a toasted whole wheat bun. Top generously with the apple cabbage slaw. Serve immediately for best taste and texture.

Notes

  • Grilling at low heat ensures the ground chicken cooks evenly without drying out.
  • Allowing the slaw to rest before serving enhances its flavor as the dressing melds with the cabbage and apple.
  • Use a meat thermometer to verify the internal temperature for food safety.
  • Whole wheat buns add extra fiber and nutrients compared to regular buns.
  • Fresh rosemary offers a more vibrant flavor, but dried rosemary works well as a substitute.
