Ingredients

Protein and Oil

  • 2 teaspoons olive oil
  • 1 pound ground chicken
  • ¼ teaspoon kosher salt

Liquids and Sauces

  • 1 ½ cups chicken stock
  • ¼ cup low-sodium tamari (or soy sauce)

Dry and Packaged

  • 2 (3-ounce) packages ramen noodles, flavoring packets discarded or saved for another use
  • 1 tablespoon brown sugar
  • 2 tablespoons smooth peanut butter

Veggies and Aromatics

  • 9 ounces cabbage slaw mix (about 4 cups)
  • 1 cup shredded carrots
  • 3 cloves garlic, minced

Instructions

  1. Cook the Chicken: Heat a large, high-sided skillet or heavy-bottom pan such as a Dutch oven over medium-high heat. Add the olive oil and ground chicken, breaking it into small chunks. Cook for 3 minutes until it starts to brown. Add the kosher salt and continue cooking for another 2 to 3 minutes, stirring frequently, until the chicken is fully cooked and no longer pink.
  2. Make the Sauce: While the chicken is cooking, combine the minced garlic, tamari, brown sugar, and smooth peanut butter in a small bowl. Whisk until the sauce is smooth and well blended. Set aside.
  3. Add the Noodles: Increase the heat to high and pour in the chicken stock along with half of the prepared peanut sauce. Bring the mixture to a strong simmer and add the ramen noodles. Cook for 2 to 3 minutes, stirring and flipping the noodles occasionally to ensure even cooking and coating with the broth, until the noodles begin to soften but are not fully cooked.
  4. Add the Veggies: Stir in the cabbage slaw mix, shredded carrots, and the remaining half of the peanut sauce. Combine well and cook for an additional 2 to 3 minutes until the noodles are fully cooked and the vegetables have softened slightly.
  5. Serve: Remove from heat and serve immediately. Add any desired toppings such as chopped green onions, sesame seeds, or crushed peanuts to enhance flavor and texture.
