Ingredients

Crust

  • 1 & 1/2 cups (145g) honey graham cracker crumbs
  • 1/2 cup (45g) unsweetened shredded coconut
  • 1/2 cup (50g) finely chopped hazelnuts (or any kind of nuts)
  • 6 Tbsp unsalted butter, melted

Filling & Topping

  • 750 g container of vanilla Greek yogurt (a thick style like Fage or PC Skyr recommended)
  • 4 Zespri SunGold Kiwifruits, peeled and sliced

Instructions

  1. Prepare the crust: In a mixing bowl, combine the honey graham cracker crumbs, unsweetened shredded coconut, finely chopped hazelnuts, and melted unsalted butter. Mix thoroughly until all ingredients are evenly incorporated.
  2. Form the tart base: Press the crumb mixture firmly into the bottom of a 9-inch tart pan with a removable bottom, ensuring an even layer that covers the base and slightly up the sides.
  3. Chill the crust: Place the prepared tart crust in the freezer and chill for 20 minutes. This helps to set the base and make it firm enough for layering the yogurt.
  4. Add the yogurt layer: Remove the crust from the freezer and spread the vanilla Greek yogurt evenly over the chilled crust, creating a smooth and thick topping.
  5. Decorate with kiwifruit: Arrange the peeled and sliced Zespri SunGold Kiwifruits decoratively over the yogurt layer for a fresh, colorful finish.
