This homemade cup noodles recipe offers a quick, easy, and customizable alternative to store-bought instant noodles. Using simple pantry staples and fresh frozen vegetables, you can prepare a flavorful and satisfying single-serving meal in just minutes by adding boiling water. Perfect for meal prepping, it’s designed to be made in a wide-mouth mason jar for convenience and freshness.

Ingredients

Seasoning Mix

  • 1 1/2 teaspoons Better Than Bouillon paste (chicken or mushroom flavor)
  • 1 1/2 teaspoons soy sauce (or low-sodium soy sauce)
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground ginger or ground turmeric

Vegetables

  • 1/2 cup frozen mixed vegetables (carrots, corn, peas, green beans)

Noodles & Garnish

  • 2 ounces dried ramen noodles
  • 1 green onion, sliced

Instructions

  1. Prepare Seasoning Base: Add the Better Than Bouillon paste to a wide-mouth 16-ounce mason jar. Add soy sauce, dried parsley, garlic powder, and ground ginger or turmeric. Use a spoon to mix these ingredients gently in the bottom of the jar to combine the flavors.
  2. Add Vegetables: Pour the frozen mixed vegetables directly over the seasoning mix in the jar. Keep the ingredients layered without mixing to maintain freshness and texture.
  3. Add Noodles and Garnish: Break the dried ramen noodles into smaller pieces for quicker cooking, then place them on top of the frozen vegetables in the jar. Sprinkle sliced green onions over the noodles but do not stir. Secure the lid and store the jar in the refrigerator if prepping in advance, up to 4 days.
  4. Serve Your Noodles: When ready to eat, remove the lid of the jar. If prepped ahead, unwrap any plastic-wrapped sliced green onions and sprinkle on top for freshness.
  5. Add Boiling Water: Pour 1 1/4 cups of boiling water over the noodles and other ingredients. Replace the lid and let the jar sit on a heat-safe surface for 5 minutes, allowing the noodles to soften and the flavors to meld.
  6. Enjoy Your Cup Noodles: After 5 minutes, remove the lid. Stir thoroughly with chopsticks or a spoon to fully dissolve the seasonings and distribute flavors evenly. Enjoy your quick and tasty homemade cup noodles!

Notes

  • For a richer broth, increase bouillon paste by 1/4 teaspoon and soy sauce by 1/4 teaspoon, using low-sodium soy sauce to control saltiness.
  • Carefully measure bouillon paste to avoid overpowering salt levels.
  • Wrap sliced green onions in plastic wrap to keep them crisp and fresh when prepping ahead.
  • This recipe scales perfectly for a single serving in a 16-ounce mason jar.
  • Use any dried ramen noodles you prefer; breaking them helps reduce soaking time.
