Ingredients

  • 1/2 cup peanut butter (or PB2 combined with water)
  • 3 tbsp low sodium soy sauce
  • 2 tbsp pure maple syrup
  • 1 tbsp fresh lime juice
  • 1 tbsp rice vinegar
  • 2 tsp Asian garlic chili paste (sambal oelek)
  • 1/4 tsp ground ginger
  • 3 tbsp warm water (more if needed)

Instructions

  1. Melt the peanut butter: Warm the peanut butter in the microwave until slightly melted to soften it, which will make the sauce easier to stir and blend. This step can be skipped if desired.
  2. Combine the ingredients: Add the low sodium soy sauce, pure maple syrup, fresh lime juice, rice vinegar, Asian garlic chili paste, and ground ginger to a small bowl with the melted peanut butter.
  3. Whisk to smooth consistency: Whisk all ingredients together, gradually adding the warm water a little at a time until the sauce reaches a smooth, thick but pourable consistency.
  4. Taste and adjust seasoning: Taste the sauce and adjust the flavors as needed—add more soy sauce for saltiness, lime juice for tanginess, or chili paste for heat to suit your preference.
