This Cashew Cream recipe is a simple, creamy dairy-free alternative made from raw cashews blended with water and a pinch of sea salt. Perfect as a base for sauces, dressings, or soup toppings, it can be quickly prepared with minimal ingredients and stored conveniently in the fridge or freezer.

  • 3/4 cup filtered water
  • 1/8 tsp sea salt (optional)

Instructions

  1. Optional – Soak the cashews: If you are not using a high-speed blender, soak the cashews by placing them in boiling water for 30 minutes. This softens the nuts to ensure a smoother cream. After soaking, drain and rinse the cashews thoroughly.
  2. Blend the ingredients: Add the soaked or raw cashews, filtered water, and sea salt (if using) to your blender. Blend until the mixture is smooth and creamy. If your blender isn’t very powerful, pause every 2 minutes to scrape down the sides and allow the motor to rest, ensuring an even blend and preventing overheating.
  3. Store the cashew cream: Transfer the cashew cream to an airtight container. Store it in the refrigerator for up to 5-7 days. For longer storage, pour 1-2 tablespoons of cashew cream into an ice cube tray and freeze. Once frozen, transfer the cubes to a Ziplock bag and store in the freezer for up to 6 months. Thaw overnight in the fridge before use, then mix or re-blend briefly to restore creaminess, or add cubes directly to hot sauces to melt.
