A classic Southern-inspired recipe for crispy, flavorful salmon croquettes made with canned salmon, sautéed peppers and onions, and a blend of seasonings. These golden patties are pan-fried to perfection, making a quick and satisfying meal perfect for lunch or dinner.

Ingredients

Salmon Mixture

  • 15 ounces canned salmon (drained)
  • 1/2 cup diced yellow onion
  • 2 tablespoons finely diced red bell pepper
  • 2 tablespoons finely diced green bell pepper
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon soul food seasoning
  • 1 teaspoon lemon pepper seasoning

For Frying

  • 1/2 cup oil for frying (vegetable or canola oil)

Instructions

  1. Prepare the salmon: Drain canned salmon and place it in a medium bowl. Break into chunks using a fork, carefully removing any bones or skin for a smooth texture.
  2. Sauté the vegetables: In a skillet over medium heat, sauté diced yellow onion, red bell pepper, and green bell pepper until tender and fragrant, about 5 minutes.
  3. Combine ingredients: Add the sautéed peppers and onions, plain breadcrumbs, egg, fresh lemon juice, soul food seasoning, and lemon pepper seasoning to the bowl with salmon. Stir well to combine all ingredients into a cohesive mixture.
  4. Form croquettes: Shape the salmon mixture into 8 evenly sized patties and place them on a plate, ready for frying.
  5. Heat the oil: Heat vegetable or canola oil in a skillet over medium-high heat until hot but not smoking.
  6. Fry the croquettes: Carefully place salmon patties into the hot oil, avoiding overcrowding the pan. Fry each side until light golden brown and crispy, approximately 3 to 4 minutes per side.
  7. Drain excess oil: Once croquettes are golden and cooked through, transfer them to a plate lined with paper towels to absorb any excess oil.
  8. Serve: Serve salmon croquettes warm, paired with your favorite sauces or side dishes for a delicious and satisfying meal.

Notes

  • You can substitute plain breadcrumbs with gluten-free breadcrumbs if needed.
  • Adjust the soul food seasoning amount to your taste preference for altering spice level.
  • For a lighter option, bake the croquettes at 400°F for 15-20 minutes, flipping halfway through.
  • Ensure oil is hot enough before frying to prevent the patties from absorbing too much oil.
  • Remove any large bones from the canned salmon to improve texture and avoid unpleasant bites.
