This Impossible Cheeseburger Pie is a comforting and hearty dish that combines savory ground beef, crispy bacon, and melted cheeses topped with a fluffy Bisquick batter crust. Perfect for a family dinner, this pie offers classic cheeseburger flavors all baked together in one easy-to-make casserole.

Ingredients

Meat & Vegetables

  • 1 lb. lean ground beef
  • 4 slices bacon, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Seasonings & Sauces

  • ½ teaspoon seasoned salt
  • ¼ teaspoon fresh ground black pepper
  • ¼ cup ketchup

Cheeses

  • ⅔ cup shredded cheddar cheese
  • ⅔ cup shredded Pepper Jack cheese

Batter

  • ¾ cup Bisquick baking mix
  • 1 cup milk
  • 2 eggs

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 400 degrees Fahrenheit. Lightly spray a 9-inch deep dish pie pan with non-stick cooking spray to prevent sticking.
  2. Cook Meat and Vegetables: In a large skillet over medium heat, brown the ground beef and chopped bacon together. When they are about halfway browned, add the chopped onion. Continue cooking until the beef and bacon are fully browned and the onion is soft.
  3. Add Garlic and Seasonings: Reduce heat to low and stir in the minced garlic. Cook for about a minute while stirring continuously. Drain any excess grease from the skillet. Remove from heat, then stir in the seasoned salt, black pepper, and ketchup. Allow the mixture to cool for a few minutes.
  4. Add Cheese and Assemble: Stir in the shredded cheddar and Pepper Jack cheeses into the meat mixture. Spoon this cheesy hamburger mixture evenly into the prepared pie pan.
  5. Prepare Batter and Bake: In a medium bowl, whisk together Bisquick baking mix, milk, and eggs until smooth. Pour the batter evenly over the meat and cheese layer in the pie pan. Place the pie in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Remove the pie from the oven and let it cool for about 10 minutes before slicing. This rest time helps the pie set for cleaner slices.

Notes

  • Use lean ground beef to reduce excess grease.
  • Browning bacon first adds smoky flavor and texture to the pie.
  • Allow the meat mixture to cool slightly before adding the batter to prevent curdling.
  • Check doneness by inserting a toothpick into the center; it should come out clean.
  • Serve with a side salad or steamed vegetables for a complete meal.
