Ingredients

Meat and Vegetables

  • 1 tablespoon olive oil
  • 1/2 pound lean ground beef (or turkey)
  • 1/2 a yellow onion, diced
  • 1 clove garlic, minced

Spices and Sauces

  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 cup jarred spaghetti sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons Parmesan cheese, plus extra for serving

Liquids and Pasta

  • 1 1/4 cups chicken broth (or water)
  • 6 ounces spaghetti noodles

Instructions

  1. Preheat Instant Pot: Press the SAUTE button on your Instant Pot Mini to heat the pot, preparing it for sautéing the ingredients.
  2. Cook Ground Meat: Add the olive oil and lean ground beef to the Instant Pot. Cook for about 3 minutes, stirring and breaking up the meat with a spoon occasionally to ensure even browning.
  3. Add Onion: Stir in the diced yellow onion and cook together with the meat for about 4 minutes until the onion softens and becomes translucent.
  4. Add Garlic and Seasonings: Mix in the minced garlic, dried basil, dried oregano, salt, and freshly ground black pepper. Stir well to combine the flavors.
  5. Add Sauces and Broth: Pour in the jarred spaghetti sauce, tomato paste, chicken broth (or water), and add the Parmesan cheese. Stir thoroughly to create a well-mixed tomato sauce base.
  6. Turn Off Saute Mode: Turn off the Instant Pot’s SAUTE function to stop cooking the sauce for the next step.
  7. Add Spaghetti Noodles: Break the spaghetti noodles in half and layer them evenly over the tomato sauce mixture in the pot. Ensure the noodles are submerged and covered by the liquid.
  8. Set Pressure Cooking: Close the Instant Pot lid and turn the valve to the ‘sealing’ position. Press the PRESSURE COOK button and set the timer to 8 minutes for perfectly cooked pasta.
  9. Release Pressure Safely: When cooking is complete, carefully perform a manual release of the pressure by covering your hand with a kitchen towel and turning the valve to release the steam. Wait until the float valve drops before opening.
  10. Stir and Adjust Consistency: Open the lid and stir the spaghetti; it may seem watery at first but will come together. If the sauce is still too thin, use the SAUTE function to cook and reduce the sauce for 2 minutes.
  11. Serve: Divide the spaghetti into bowls and garnish with additional Parmesan cheese as desired. Serve hot and enjoy your comforting one-pot meal.

Notes

  • Breaking the spaghetti noodles in half helps them fit better in the Instant Pot and cook evenly.
  • Use chicken broth for more flavor, or water if you prefer a lighter taste.
  • To suit dietary preferences, substitute ground beef with turkey or plant-based ground meat.
  • Be careful when releasing pressure manually to avoid burns from the hot steam.
  • Parmesan cheese adds richness; for a dairy-free option, omit or use a vegan cheese alternative.
