Jalapeño Cheese Bombs are a savory, spicy appetizer featuring cream cheese, cheddar, jalapeños, and bacon all wrapped inside soft, flaky refrigerated biscuits. Baked to golden perfection and optionally brushed with melted butter and garnished with fresh cilantro, these bite-sized bombs deliver a perfect blend of creamy, cheesy, and smoky flavors that are perfect for parties, game days, or quick snacks.

Ingredients

Biscuit Dough

  • 1 can Refrigerated Biscuits, 8 count

Filling

  • 8 ounces Cream Cheese, softened
  • 2 ounces Cheddar Cheese, shredded
  • 4 ounce can Diced Jalapeño Peppers, drained
  • 4 slices Bacon, cooked and diced

Optional Toppings

  • Melted Butter
  • Fresh Cilantro

Instructions

  1. Preheat the oven. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
  2. Prepare the filling. In a medium mixing bowl, beat the softened cream cheese until it becomes light and fluffy. Gently fold in the shredded cheddar cheese, drained diced jalapeño peppers, and diced cooked bacon until all ingredients are evenly combined.
  3. Flatten the biscuits. Separate the refrigerated biscuits and press each one into a flat circle using your hands or a rolling pin, making it easier to wrap the filling inside.
  4. Fill the biscuits. Place about 1 1/2 tablespoons of the cream cheese mixture into the center of each flattened biscuit, ensuring even portions for each cheese bomb.
  5. Seal the cheese bombs. Carefully gather the edges of the biscuit dough around the filling and pinch them together tightly to seal the filling inside, making sure there are no gaps or openings.
  6. Bake. Arrange the sealed cheese bombs seam side down on the prepared baking sheet. Bake in the preheated oven for 12-14 minutes or until the biscuits turn golden brown and are fully cooked through.
  7. Add finishing touches. Once baked, if desired, brush the tops with melted butter for a rich, glossy finish and garnish with fresh cilantro to add a burst of color and fresh flavor before serving.

Notes

  • Make sure to drain the jalapeño peppers well to prevent soggy biscuits.
  • You can adjust the amount of jalapeños for more or less heat.
  • For a vegetarian version, omit the bacon or substitute with vegetarian bacon.
  • Serve these warm for the best flavor and texture.
  • Store leftovers in an airtight container and reheat in the oven for best results.
