Ingredients

Meatloaf Mixture

  • 2 pounds ground beef
  • 2 large eggs
  • 3/4 cup heavy cream
  • 2/3 cup ground pork rinds
  • 1 tablespoon organic onion powder
  • 2 teaspoons organic garlic powder
  • 1 tablespoon Italian seasoning blend
  • Pink salt, to taste
  • Cracked black pepper, to taste

Glaze

  • 1/2 cup sugar-free ketchup
  • 2 teaspoons mustard powder
  • 1/4 cup Besti Monk Fruit and Allulose Brown Sweetener (packed)

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it reaches the right temperature for baking the meatloaf evenly.
  2. Prepare the baking sheet: Line a rimmed baking sheet with parchment paper or tin foil. This will prevent the meatloaf from sticking and make cleanup easier.
  3. Mix the meatloaf base: In a large bowl, whisk together the eggs and heavy cream until smooth. Add the ground pork rinds, organic onion powder, organic garlic powder, Italian seasoning, pink salt, and cracked black pepper. Stir everything to combine well.
  4. Add the ground beef: Incorporate the ground beef into the egg mixture. Using your hands, mix thoroughly until all ingredients are evenly combined. Then shape the mixture into an 8-inch loaf on the prepared baking sheet.
  5. Make the glaze: In a small bowl, combine the sugar-free ketchup, mustard powder, and Besti Monk Fruit and Allulose Brown Sweetener. Stir until the sweetener is fully dissolved and the glaze is smooth.
  6. Apply the initial glaze: Spread half of the glaze evenly over the top of the meatloaf. This will help create a flavorful crust while baking.
  7. Bake the meatloaf: Place the baking sheet in the preheated oven and bake for 45 minutes. This partially cooks the meatloaf and allows the glaze to meld with the meat.
  8. Apply the remaining glaze: Remove the meatloaf from the oven and spread the remaining glaze on top. Return it to the oven and bake for an additional 15 minutes to set the glaze and finish cooking the meatloaf through.
  9. Rest before serving: Take the meatloaf out of the oven and let it stand for 10 minutes. This resting period allows the juices to redistribute, making the meatloaf moist and easier to slice.

Notes

  • Ground pork rinds act as a low-carb binder replacing traditional breadcrumbs, perfect for keto diets.
  • Using sugar-free ketchup and monk fruit sweetener keeps the glaze keto-friendly and reduces sugar content.
  • Letting the meatloaf rest after baking is important for juiciness and easy slicing.
  • Feel free to adjust seasoning according to taste preferences, particularly the salt and pepper.
  • This recipe can be made with ground turkey or chicken for a leaner version, though the texture and flavor will vary.
