This elegant Layered Flowering Currant Jelly Dessert features two beautifully distinct jelly layers made from flowering currant cordial, with the second layer infused with luxurious black raspberry liqueur. Ingredients

Flowering Currant Jelly Layer

  • 300 ml Flowering currant cordial
  • 1 tsp Agar agar powder

Flowering Currant and Black Raspberry Liqueur Jelly Layer

  • 300 ml Flowering currant cordial
  • 50 ml Chambord black raspberry liqueur
  • 1 tsp Agar agar powder

Instructions

  1. Prepare container: Line a container with cling film to make it easier to remove the jelly once it sets.
  2. Make first jelly layer: Add 300 ml flowering currant cordial and 1 tsp agar agar powder to a saucepan and whisk well. Bring to a boil, then reduce heat to simmer and whisk continuously for 1 minute to activate the agar agar.
  3. Set first layer: Pour the jelly mixture into the prepared container and leave to set at room temperature for 10 to 15 minutes. Prop one side of the container so the jelly sets at an angle, creating an interesting layered effect.
  4. Decorate first layer: When the jelly surface starts to set but is still slightly soft, press flowering currant flowers into it for decoration.
  5. Make second jelly layer: In a clean saucepan, combine 300 ml flowering currant cordial, 50 ml Chambord black raspberry liqueur, and 1 tsp agar agar powder. Whisk well, bring to a boil over medium-high heat, then reduce heat and simmer for 1 minute, whisking continuously.
  6. Add second layer: Remove the support from under the container so it sits flat. Pour the second jelly mixture gently over the first layer.
  7. Set second layer and decorate: Leave the layered jelly to set at room temperature for 10 to 15 minutes. Decorate with additional flowering currant flowers on top.
  8. Chill and serve: Let the jelly chill in the refrigerator for at least 30 minutes or until fully set. Turn out from the container by lifting the cling film, cut into 1-inch squares, and serve chilled.

  • Ensure continuous whisking while simmering agar agar mixtures to prevent clumps and ensure smooth texture.
  • Propping the container at an angle before the first layer sets creates a dynamic layered presentation.
