These Lemon Cake Mix Ricotta Cookies combine the light, fluffy texture of cake mix with the creamy richness of ricotta cheese, resulting in soft, tender cookies bursting with bright lemon flavor. Finished with a tangy lemon glaze, they offer a perfect balance of sweetness and citrus zest, making them a delightful treat for any occasion.

Ingredients

Cookie Dough

  • 1 box lemon cake mix (about 15.25 oz)
  • 15 oz full-fat ricotta cheese
  • 1 large egg
  • Zest of 1 lemon

Lemon Glaze

  • 3/4 cup powdered sugar
  • 2-3 Tbsp lemon juice

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Mix the Dough: In a large mixing bowl, combine the lemon cake mix, full-fat ricotta cheese, large egg, and lemon zest. Stir the ingredients thoroughly until the dough is well blended and smooth.
  3. Shape and Bake: Scoop rounded portions of the cookie dough and place them about 2 inches apart on the prepared baking sheet to allow for spreading during baking.
  4. Bake the Cookies: Bake in the preheated oven for 8 to 10 minutes, or until the bottoms of the cookies turn golden brown, indicating they are cooked through.
  5. Cool the Cookies: Transfer the baked cookies to a cooling rack and let them cool completely to room temperature before glazing.
  6. Prepare the Glaze: In a small bowl, whisk together the powdered sugar and 2 to 3 tablespoons of lemon juice until the mixture is smooth and pourable.
  7. Glaze the Cookies: Dip the face side of each cooled cookie into the lemon glaze, allowing excess glaze to drip off, and place the cookies back on the cooling rack to let the glaze set and dry for a few minutes.

Notes

  • Store the cookies in an airtight container at room temperature for up to 3 days.
  • For longer storage, refrigerate the cookies for up to 1 week; bring to room temperature before serving for best flavor.
  • You can adjust the lemon juice in the glaze to achieve your preferred tanginess and consistency.
  • If you prefer a thicker glaze, use less lemon juice; for a thinner glaze, add more.
