Ingredients

Custard Base

  • 1/3 cup granulated sugar
  • 1/2 cup malted milk powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 large egg yolks
  • 2 tbsp granulated sugar

Additional Ingredients

  • 1/2 cup heavy cream
  • 4 oz chopped dark chocolate
  • 1/2 cup smooth peanut butter
  • 1/4 tsp flakey salt (optional)

Instructions

  1. Combine Dry Ingredients and Milk: In a small saucepan, whisk together 1/3 cup sugar, malted milk powder, and salt until combined. Gradually whisk in the whole milk and 1 cup of heavy cream until smooth. Heat over low-medium heat until steaming but not boiling.
  2. Prepare Egg Yolk Mixture: In a small bowl, whisk together the egg yolks and remaining 2 tablespoons of sugar until pale and ribbon-like when lifted with the whisk.
  3. Temper the Eggs: Slowly whisk about half of the hot milk mixture into the egg yolks, whisking constantly to prevent curdling. Immediately pour this mixture back into the saucepan with the remaining hot milk, whisking constantly.
  4. Thicken the Custard: Cook the mixture over low heat, whisking continuously, until it thickens enough to coat the back of a spoon, about 5 minutes. Remove from heat.
  5. Add Chocolate and Vanilla: Stir in the chopped dark chocolate and vanilla extract, whisking until the chocolate is fully melted and the custard is smooth.
  6. Strain and Chill: Pour the custard through a fine mesh sieve into a heat-proof bowl. Cover with plastic wrap directly on the surface to prevent a skin from forming. Chill in the refrigerator until completely cooled, about 2 hours.
  7. Incorporate Remaining Cream and Smooth: Stir in the remaining 1/2 cup heavy cream until combined. Optionally blend with an immersion blender for one minute to achieve extra smooth texture.
  8. Churn the Ice Cream: Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions until it reaches soft-serve consistency.
  9. Prepare Peanut Butter Swirl: Microwave the peanut butter in a microwave-safe bowl for 30 to 60 seconds until it becomes thin and drizzle-able but not too hot.
  10. Layer and Freeze: Spoon a layer of ice cream into your container, drizzle with melted peanut butter and a pinch of flakey salt if using. Repeat layering until the container is full with peanut butter ripples throughout. Freeze for at least 2 hours or until firm.
