These Mini Cherry Cheesecakes are delightful individual-sized treats with a buttery graham cracker crust, creamy cheesecake filling, and a sweet cherry topping. Perfect for parties or a special dessert, they are easy to make and sure to impress with their rich flavor and charming presentation.

Ingredients

Crust

  • 2 Cups Crushed Graham Crackers
  • 6 Tablespoons Butter (melted)

Cheesecake Filling

  • 2 8oz Packs Cream Cheese, softened
  • 1/2 Cup Granulated Sugar
  • Pinch Salt
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Vanilla Extract
  • 2 Large Eggs

Topping

  • 1 21oz Can Cherry Pie Filling or Homemade Cherry Pie Filling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to ensure it’s at the perfect temperature for baking the mini cheesecakes.
  2. Prepare Crust Mixture: In a medium mixing bowl, combine the crushed graham crackers and melted butter, mixing well until the mixture resembles wet sand.
  3. Form Crust in Pan: Line a cupcake pan with paper liners. Add 2 tablespoons of the graham cracker mixture into each liner and press firmly into the bottom using a small glass or the back of a spoon to create an even crust layer.
  4. Make Cheesecake Filling: In the bowl of a stand mixer, combine the softened cream cheese, granulated sugar, a pinch of salt, lemon juice, vanilla extract, and eggs. Mix on low speed until all ingredients are fully combined and the batter is smooth.
  5. Fill the Cups: Spoon the cheesecake batter over the prepared crusts in each cupcake liner, filling almost to the top, keeping in mind that they will not rise significantly.
  6. Bake: Place the cupcake pan in the preheated oven and bake for 15-18 minutes until the cheesecakes are set but still slightly jiggly in the center.
  7. Cool and Chill: Remove the pan from the oven and allow the cheesecakes to cool to room temperature. Then transfer them to the refrigerator to chill for at least 2 hours to set properly.
  8. Add Cherry Topping: Just before serving, spoon cherry pie filling generously over each mini cheesecake to add a sweet and fruity finish.
