  • 60 g white granulated sugar (2.1 oz., 5 Tablespoons)
  • 20 g dark (or light) brown sugar (0.7 oz., 1 and 1/2 Tablespoons)
  • 10 g whole milk, at room temperature (0.35 oz., 2/3 Tablespoon)
  • 1 large egg yolk, at room temperature
  • 80 g all-purpose flour (2.8 oz., 1/2 cup and 2 Tablespoons)
  • 1/3 teaspoon salt
  • 1/4 teaspoon baking soda
  • 40 g semi-sweet or milk chocolate chips (1.4 oz.)
  • 40 g semi-sweet chocolate, chopped into small pieces (or chocolate chips) (1.4 oz.)

Chocolate Whipped Cream (Optional)

  • 60 g heavy cream (35% fat), cold (2.1 oz., 1/4 cup)
  • 30 g bittersweet chocolate (65% cocoa) (1.1 oz.)

Instructions

  1. Prepare the pan: Preheat your oven to 180°C (356°F) using a conventional setting. Grease a 15 cm (6-inch) springform cake pan and line the bottom with parchment paper. Grease the parchment paper to ensure a smooth surface and set the pan aside.
  2. Mix butter and sugars: In a heatproof bowl, combine the hot, melted butter with white and brown sugars. Stir well to dissolve the sugars and break any brown sugar lumps using the back of a spoon.
  3. Add milk and egg yolk: Stir in the milk, then mix in the egg yolk until the mixture is fully incorporated and smooth.

Lighten the chocolate by mixing a small amount of whipped cream into it, then fold this mixture gently back into the whipped cream until fully combined but not deflated.
