This recipe for Miso Avocado Toast elevates the classic avocado toast with a savory miso butter and a fresh spinach topping. The combination of miso paste and vegan butter toasted on sourdough provides a rich umami flavor, complemented by creamy avocado, tangy lemon-spiked spinach, and a drizzle of miso dressing. It’s a quick, flavorful, and vegan-friendly breakfast or snack that comes together in just 15 minutes.

Ingredients

Bread and Butter

  • 2 slices sourdough or seed bread (or 4 depending on loaf width)
  • 2 tsp vegan butter
  • 2 tsp miso paste

Toppings

  • 1 avocado, sliced
  • 2 cups packed fresh spinach
  • 1 tsp lemon juice
  • 4 tbsp hummus (homemade preferred)
  • Dash of water
  • Sprinkle of toasted sesame seeds, pumpkin seeds, hemp seeds, pickled red onion, or desired toppings

Instructions

  1. Prepare miso butter: In a small dish, combine 2 tsp vegan butter and 1 tsp miso paste. Stir until well blended. Spread this miso butter mixture evenly onto both slices of sourdough bread.
  2. Toast the bread: Heat a skillet over medium heat. Once hot, add the bread slices and toast each side for a couple of minutes, pressing lightly with a spatula to encourage even browning. Remove the toasted bread from the skillet.
  3. Prepare avocado: While the bread is toasting, slice the avocado and set aside.
  4. Sauté spinach: Add the fresh spinach to the hot skillet along with a splash of 1 tsp lemon juice. Stir and cook just until the spinach wilts, then remove from heat.
  5. Assemble toast: Spread hummus onto each slice of toasted bread. Top with the sautéed spinach, followed by the sliced avocado.
  6. Make miso drizzle: In the same small dish used for miso butter, combine the remaining 1 tsp miso paste with ½ tsp lemon juice and a dash of water. Whisk together until pourable but not runny, then drizzle this sauce over the avocado toast.
  7. Finish with toppings: Sprinkle toasted sesame seeds, pumpkin seeds, hemp seeds, pickled red onion, or any favorite toppings over the assembled avocado toast for added texture and flavor.

Notes

  • Use thicker slices of bread for best results and to hold toppings well.
  • Adjust lemon juice quantity to taste, adding more for brightness if desired.
  • Homemade hummus enhances flavor and saves money but store-bought works fine.
  • Feel free to customize toppings with nuts, seeds, or pickled vegetables based on preference.
  • This recipe is naturally vegan and can be adapted to gluten-free bread if needed.
