This Mixed Berry Granola is a delightful, homemade snack combining old fashioned oats, nuts, and freeze-dried berries, baked to golden perfection and sweetened naturally with maple syrup and jam. It’s a crunchy, clumpy granola that can be enjoyed immediately or stored for later, making it a perfect breakfast or snack option.

Ingredients

Dry Ingredients

  • 1½ cups old fashioned oats
  • 1 tsp chia seeds
  • ½ tsp Kosher or fine sea salt
  • ¼ tsp ground cinnamon
  • ¼ cup sliced almonds

Wet Ingredients

  • 1 tsp vanilla extract
  • ¼ cup extra virgin olive oil or canola oil
  • ¼ cup maple syrup
  • ¼ cup raspberry or strawberry jam/preserves

Finisher

  • 1 cup freeze-dried berries

Instructions

  1. Preheat Oven: Preheat your oven to 300℉ (150℃) and line a 9 by 13-inch baking sheet with parchment paper or a silicone baking mat to prevent sticking and allow even cooking.
  2. Mix Ingredients: In a medium-sized bowl, combine all ingredients except for the freeze-dried berries. Stir the mixture thoroughly to ensure the oats, seeds, nuts, and spices are evenly coated with the oils, maple syrup, and jam.
  3. Spread on Baking Sheet: Pour the granola mixture onto the prepared baking sheet. Spread it out evenly in a single layer, making sure the mixture touches to promote clumping during baking.
  4. Bake the Granola: Place the baking sheet in the oven and bake for 35 to 45 minutes until the granola turns a golden brown color. Keep an eye on it to prevent burning, stirring is not required for clumpy texture.
  5. Cool and Break: Remove the pan from the oven and allow the granola to cool undisturbed on the baking sheet for 15 to 20 minutes. This cooling step helps the granola harden and form clusters. Once cool to the touch, break the granola into bite-sized pieces using your hands.
  6. Add Berries and Serve: Toss the broken granola with the freeze-dried berries for a burst of fruity flavor. Serve immediately or store in an airtight container for later enjoyment.
