  • 60 ml dairy free cream
  • 2 cups baby spinach, packed
  • Salt and pepper, to taste

Instructions

  1. Heat oil and soften onion: Heat the olive oil in a large, deep frying pan or pot over medium heat. Add the finely diced onion and cook, stirring occasionally, for 4 to 5 minutes until softened and translucent.
  2. Brown the ground beef: Add the beef mince to the pan and cook for 5 to 6 minutes, breaking it up with a spoon until browned all over and any liquid evaporates.
  3. Add herbs and garlic: Stir in the Italian herbs and minced garlic. Cook for 1 minute, stirring constantly, until fragrant and well combined.
  4. Cook orzo in sauce: Mix in the risoni (orzo), passata, and beef stock. Bring the mixture to a gentle boil, then reduce heat to low. Simmer uncovered for 10 to 12 minutes, stirring frequently until the orzo is tender, and most of the liquid is absorbed. The sauce should be thick but not soupy.
  5. Incorporate cream and spinach: Stir in the dairy free cream and baby spinach. Cook for 1 to 2 minutes until the spinach wilts and the sauce becomes creamy and well blended.
  6. Season and serve: Season the dish with salt and pepper to taste. Serve hot, topped with dairy free parmesan and a scattering of fresh chopped parsley for garnish.
