Ingredients

Potatoes

  • 1 1/2 lbs russet or gold potatoes, peeled and cut into 1/4-inch cubes
  • 1 tbsp kosher salt

Chorizo Mixture

  • 1 tbsp olive oil
  • 10 oz pork or beef chorizo, casings removed
  • 1/2 white onion, diced

Instructions

  1. Boil Potatoes: Place the peeled and cubed potatoes in a saucepan with kosher salt and cover with water. Bring the water to a boil, then reduce heat to medium and cook the potatoes for about 8 minutes or until they are fork tender. Drain the water and set the potatoes aside.
