Ingredients

Peach Cobbler Filling

  • 4 cups fresh peaches, peeled and chopped (or frozen, thawed)

Filling

  • 8 ounces cream cheese, room temperature
  • 1/2 cup sifted powdered sugar
  • 1/4 cup peach preserves, slightly warmed
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Ladyfingers Layer

  • 1/3 cup peach nectar or peach juice
  • 1 teaspoon bourbon or vanilla extract
  • 1 package ladyfingers

Instructions

  1. Prepare the Peaches: In a saucepan over medium heat, combine the chopped peaches, granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, and nutmeg. Cook for 5 to 7 minutes until the peaches soften and release their juices.
  2. Thicken the Filling: Whisk together cornstarch and water in a small bowl. Pour this mixture into the peach mixture, stirring continuously. Cook for an additional 2 to 3 minutes until the mixture thickens to a peach cobbler-like consistency. Remove from heat and let cool completely to room temperature.
  3. Whip the Cream: In a mixing bowl, whip the heavy cream with vanilla extract until stiff peaks form. Set aside.
  4. Make the Cheese Filling: In a large bowl, beat the cream cheese, powdered sugar, and warmed peach preserves with an electric mixer on medium speed until smooth and well combined. Stir in half a cup of the whipped cream to lighten the mixture, then gently fold in ground cinnamon and nutmeg. Set aside.
  5. Prepare the Ladyfingers: Mix peach nectar with bourbon or vanilla extract in a small bowl. Place the ladyfingers in another bowl and drizzle evenly with the peach nectar mixture to soak them lightly.
  6. Assemble the Dessert: In a 9×9 inch glass baking dish, arrange a layer of soaked ladyfingers as the base. Spread half of the cream cheese filling over the ladyfingers, followed by half of the cooled peach mixture. Top with half of the remaining whipped cream. Repeat the layering process with the remaining ladyfingers, filling, and whipped cream.
  7. Chill and Serve: Cover the dish and refrigerate overnight or for at least 6 hours to allow the flavors to meld and the dessert to set. Before serving, optionally sprinkle ground cinnamon on top for garnish.
