Ingredients

Base

  • 1 cup powdered sugar
  • 2 cups Rice Krispies cereal, slightly crushed

Chocolate Coating

  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening

Instructions

  1. Prepare the base mixture. Line a cookie sheet with parchment paper or wax paper. In a large bowl, cream together the peanut butter, softened butter, and powdered sugar until smooth and combined. Stir in the slightly crushed Rice Krispies cereal, folding gently until the mixture is evenly blended.
  2. Form and chill the balls. Shape the mixture into small, bite-sized balls and place them evenly spaced on the prepared cookie sheet. Refrigerate the balls for at least 30 minutes to firm up before dipping.
  3. Melt the chocolate coating. In a large microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable shortening. Microwave for 1 minute, then stir thoroughly. Continue heating in 20-30 second intervals, stirring after each, until the chocolate is almost fully melted. Stir until the mixture is completely smooth and glossy.
  4. Dip the peanut butter balls. Using a fork or dipping tool, carefully dip each chilled peanut butter ball into the melted chocolate to fully coat it. Place the coated balls back onto the cookie sheet to set.
  5. Set and store. Allow the chocolate coating to firm up at room temperature or in the refrigerator. Once set, store the peanut butter balls in an airtight container in the refrigerator for several days or freeze them for longer storage.
