Ingredients

Bar Base

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1/2 cup butter, softened
  • 1 egg
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Frosting

  • 1/4 cup butter, softened
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 23 tablespoons milk

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cream Butter, Peanut Butter, and Sugars: In a large bowl, cream together the softened butter, peanut butter, sugar, and brown sugar until smooth and well combined. Then, add the egg and mix thoroughly to incorporate.
  3. Combine Dry Ingredients and Mix: Add the all-purpose flour, old-fashioned oats, baking soda, and salt to the wet mixture and stir until all ingredients are well mixed. The batter will be wet; this is expected. Press the mixture evenly into the prepared baking dish to form the bar base.
  4. Bake the Bars: Bake the bars in the preheated oven for 15-18 minutes, or until the edges are golden brown. Then remove from the oven and allow the bars to cool completely in the pan before frosting.
  5. Prepare the Frosting: In a medium bowl, beat together the softened butter, peanut butter, and vanilla extract until the mixture is fluffy and light. Gradually add the powdered sugar while continuing to beat. Slowly mix in 2 to 3 tablespoons of milk, adding just enough to reach your desired frosting consistency.
  6. Frost the Bars: Once the bars are completely cooled, spread the peanut butter frosting evenly over the top. Slice into bars and serve.
