Ingredients

Pastry Dough

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 1/3 cup cold water

Peanut Butter Filling

  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (to soften filling, optional)

Egg Wash

  • 1 large egg
  • 1 tablespoon water

Glaze

  • 1/2 cup powdered sugar
  • 2 teaspoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a large bowl, whisk together flour, sugar, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the flour until mixture resembles coarse crumbs. Gradually add cold water, stirring until the dough starts to come together. Form the dough into a ball, wrap in plastic wrap, and chill for 30 minutes.
  2. Make the Filling: In a small bowl, combine the creamy peanut butter, powdered sugar, vanilla extract, and milk (if using). Mix until smooth and creamy. Set aside.
  3. Roll and Cut Dough: On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut into rectangles approximately 3×4 inches in size. You should have an even number of rectangles.
  4. Assemble the Pop Tarts: Place half of the rectangles on a baking sheet lined with parchment paper. Spoon about 1 tablespoon of the peanut butter filling onto the center of each rectangle, leaving space around edges. Brush the edges with egg wash, then top with a second rectangle of dough. Press the edges firmly with a fork to seal completely.
  5. Apply Egg Wash and Vent: Brush the tops of the sealed pop tarts with the egg wash. Use a fork or knife tip to poke 3-4 small holes in each top to allow steam to escape during baking.
  6. Bake: Preheat the oven to 375°F (190°C). Bake the pop tarts for 20-25 minutes or until golden brown and puffed.
  7. Prepare the Glaze: While the pop tarts bake, whisk together powdered sugar, milk, and vanilla extract to make a smooth glaze.
  8. Glaze and Serve: Remove the pop tarts from the oven and allow to cool for 10 minutes. Drizzle or spread the glaze over the warm pop tarts. Let glaze set before serving.
