Ingredients

Phyllo Bundles

  • 6 sheets Athens Fillo® Dough, thawed
  • 2 tablespoons seasoned bread crumbs
  • 2 tablespoons crisp bacon, finely chopped
  • 3 tablespoons finely grated Parmesan cheese
  • Cooking Spray

Vegetables

  • 18 medium asparagus spears, trimmed

Instructions

  1. Thaw Fillo Dough: Thaw one roll of fillo dough according to the package instructions, ensuring sheets are pliable and ready for use.
  2. Preheat Oven: Set oven to 350°F (175°C) and place a rack in the middle to ensure even baking.
  3. Prepare Bundling Station: Unroll the fillo sheets and cover them with plastic wrap and a damp towel to prevent drying out as you work.
  4. Make Filling Mixture: In a small bowl, combine the seasoned bread crumbs, finely chopped crisp bacon, and grated Parmesan cheese evenly.
  5. Prepare Fillo Sheets: Lay one sheet of fillo dough on a clean surface. Lightly coat half the sheet lengthwise with cooking spray, then fold the sheet in half lengthwise and spray the top layer again to create a sturdy base for wrapping.
  6. Assemble Bundles: Place 3 asparagus spears horizontally about 1 inch from the short end of the folded fillo sheet. Evenly sprinkle 1 tablespoon of the breadcrumb, bacon, and Parmesan mixture over the asparagus.
  7. Roll and Seal: Carefully roll the fillo dough around the asparagus spears to form a tight bundle. Place the bundle seam side down on a baking tray lined with parchment paper or lightly greased.
  8. Finish Bundles: Lightly spray the outside of each bundle with cooking spray and sprinkle additional breadcrumb mixture on top to garnish and add extra crispness.
  9. Repeat: Repeat the process with the remaining fillo sheets, asparagus, and breadcrumb mixture until all bundles are assembled and placed on the baking tray.
  10. Bake: Place the tray in the preheated oven and bake for 15-18 minutes, or until the fillo is a light golden brown and the asparagus has softened to a tender texture.
  11. Serve: Remove from the oven and serve the bundles immediately while warm and crispy for the best flavor and texture.
