  • 1 cup yogurt
  • 1 tbsp honey or maple syrup (optional)

Instructions

  1. Blend Base Ingredients: Combine the shelled pistachios, protein powder (if using), Greek or coconut yogurt, vanilla extract, sea salt, sweetener of choice, and your selected milk in a blender. Blend until the mixture is very smooth. Taste and adjust sweetness, salt, or vanilla as needed to suit your preference.
  2. Stir in Chia Seeds: Pour the blended mixture into a bowl and stir in the chia seeds thoroughly to ensure they are evenly distributed.
  3. Refrigerate to Set: Transfer the pudding mixture into two individual jars or bowls. Place them in the refrigerator for at least 3-4 hours or preferably overnight. This chilling time allows the chia seeds to absorb liquid and the pudding to thicken to a creamy consistency.
  4. Prepare Strawberry Topping (Optional): In a blender or small food processor, pulse the freeze-dried strawberries until they become a fine powder. Then, stir this strawberry powder into the yogurt, or blend the powder and yogurt together with an optional tablespoon of honey or maple syrup for added sweetness.
  5. Serve and Store: Before serving, give the pudding a good stir and top with the strawberry yogurt mixture if desired. Store any leftovers in airtight containers or jars in the refrigerator for up to 4 days, making this recipe ideal for meal prep or quick grab-and-go meals.
