Ingredients

Dry Ingredients

  • 1 cup Oats
  • 1 cup Dates (pitted)
  • 3/4 cup Pistachios (divided)
  • 1/4 cup Dark Chocolate Chips
  • 1/4 cup Coconut (shredded)
  • 2 Tbsp Flaxseed (ground)

Wet Ingredients

  • 1/2 cup Peanut Butter
  • 2 Tbsp Warm Water

Instructions

  1. Chop Pistachios: Place 1/4 cup of the pistachios into a food processor, pulse until finely chopped, then set aside on a plate to use for coating the balls.
  2. Combine Ingredients: Add the remaining 1/2 cup of pistachios along with the oats, pitted dates, peanut butter, dark chocolate chips, shredded coconut, and ground flaxseed to the food processor. Pulse until the mixture is well combined and forms a sticky dough-like consistency.
  3. Add Water: Pour in 2 tablespoons of warm water and pulse the mixture again to help it come together, ensuring all ingredients are evenly incorporated.
  4. Form Balls: Transfer the mixture onto a plate or clean surface. Using your hands, form the mixture into 1-inch diameter balls, then roll each ball in the chopped pistachios to coat thoroughly.
  5. Chill and Serve: Place the coated balls onto a baking sheet lined with parchment paper. Refrigerate for at least 2 hours to firm up before serving. Store in the refrigerator for up to 7 days to maintain freshness.
