These Prosciutto and Melon Skewers combine the sweet juiciness of cantaloupe and honeydew melon with the salty flavor of prosciutto and creamy ciliegine mozzarella. Garnished with fresh mint leaves, they make a refreshing, elegant, and easy-to-prepare appetizer perfect for summer gatherings or light snacks.

Ingredients

Melons

  • 1 cantaloupe
  • 1 honeydew

Meat

  • 5 oz. prosciutto

Dairy

  • 8 oz. ciliegine (small mozzarella balls)

Herbs

  • 20 small mint leaves

Instructions

  1. Prepare Melons: Using a melon baller, scoop out 1-2 cups of balls from both the cantaloupe and honeydew. Set aside the melon balls for assembling the skewers.
  2. Make Prosciutto Roses: Peel slices of prosciutto from the package and cut each slice in half using kitchen scissors. Fold each half slice over itself and carefully roll it into a rose shape. Repeat this with all prosciutto slices to create multiple rose shapes.
  3. Assemble Skewers: Take a bamboo skewer and thread one cantaloupe ball onto it, followed by one prosciutto rose, and then another melon ball. Repeat the process with honeydew melon balls and ciliegine mozzarella balls, assembling separate skewers for each type. Continue until all melon balls, prosciutto roses, and cheese are used.
  4. Garnish and Serve: Arrange the skewers on a plate in an even stack. Place small mint leaves on either side of the prosciutto roses for a fresh and aromatic garnish. Refrigerate covered with plastic wrap if not serving immediately, or serve right away for best flavor and texture.
