Ingredients

Tapioca Balls and Syrup

  • ¾ cup water
  • ¼ cup tapioca balls
  • 2 tablespoons brown sugar

Bubble Tea Mixture

  • ⅓ cup water
  • ⅓ cup milk
  • 2 tablespoons purple sweet potato powder
  • 1 cup ice

Instructions

  1. Cook tapioca balls: Combine ¾ cup of water and 2 tablespoons of brown sugar in a saucepan and bring to a boil. Once large bubbles appear (approximately 2-4 minutes), add ¼ cup tapioca balls. Maintain boiling on medium-high heat for 8 more minutes until the tapioca balls become soft and chewy. Turn off the heat and allow the tapioca balls to cool slightly until warm but not too hot to eat. Adjust cooking time based on the tapioca ball brand if necessary.
  2. Prepare the bubble tea mixture: In a cocktail shaker, add 1 cup of ice, ⅓ cup water, ⅓ cup milk, and then 2 tablespoons of purple sweet potato powder. Shake vigorously about 15 times to mix the ingredients thoroughly and dissolve the powder fully.
  3. Assemble the drink: Transfer the warm tapioca balls along with the brown sugar syrup into a serving cup. Pour the shaken purple sweet potato milk tea over the tapioca balls. Serve immediately with an extra wide straw to enjoy the tapioca pearls easily.
