Ingredients

Red Layer

  • 1 ½ cups cubed watermelon
  • 1 tablespoon Karo light corn syrup

White Layer

  • 2/3 cup unsweetened coconut milk
  • 1 ½ tablespoon Karo light corn syrup
  • Pinch kosher salt

Blue Layer

  • 2 cups blueberries
  • 1 tablespoon Karo light corn syrup
  • 2 teaspoons fresh lemon juice

Instructions

  1. Prepare the mold and freezer space: Place your popsicle mold on a plate or small baking sheet to catch any drips and make sufficient space in your freezer for multiple freezing intervals required by the recipe.
  2. Make the red watermelon layer: Combine cubed watermelon, Karo light corn syrup, and fresh lemon juice in a blender and process until smooth, about 30 seconds. Strain the puree through a fine mesh sieve to remove pulp and ensure a smooth texture.
  3. Freeze the red layer: Pour approximately 1 ½ tablespoons of the red mixture into the bottom of each popsicle mold. Place in the freezer and allow to freeze until solid, about 45 minutes.
  4. Make the white coconut layer: In a bowl, stir together unsweetened coconut milk, Karo light corn syrup, and a pinch of kosher salt until well combined. Pour about 1 ½ tablespoons of this mixture over the frozen red layer in each mold.
  5. Freeze the white layer: Return the molds to the freezer and freeze until this layer is solid, approximately 1 hour and 10 minutes.
  6. Make the blue blueberry layer: Blend blueberries, Karo light corn syrup, and fresh lemon juice until smooth, about 30 seconds. Strain the mixture through a fine mesh sieve to remove skins and seeds for a smooth finish.
  7. Assemble and freeze the blue layer: Pour the blueberry mixture into each mold to fill it up. Insert the popsicle sticks and freeze until completely solid, about 45 minutes.
  8. Serve: To unmold popsicles, run the mold under warm water for about 30 seconds to loosen. Remove the popsicles and enjoy your colorful, refreshing treat.
