A classic Reuben sandwich recipe featuring tender corned beef, melted Swiss cheese, and tangy sauerkraut layered between buttery grilled rye bread slices. Enhanced with a flavorful sauce of your choice, this quick and comforting sandwich is perfect for a satisfying lunch or dinner.

Ingredients

Bread & Cheese

  • 4 slices dark rye (pumpernickel) or marble rye bread
  • Butter, softened, for spreading
  • 4 slices Swiss cheese

Filling

  • About ½ lb. thinly sliced corned beef (or more, to taste)
  • Good quality sauerkraut, rinsed and drained (preferably refrigerated bagged kraut)

Sauce (Optional)

  • 1000 Island dressing, Russian dressing, Fry Sauce, or horseradish cream sauce (or sauce of your choice)

Instructions

  1. Heat the Corned Beef and Sauerkraut: In one skillet, place the thinly sliced corned beef and heat it over medium heat, flipping occasionally until warmed through and some pieces develop a light crispiness. Push the corned beef to one side of the skillet and add a mound of the rinsed and drained sauerkraut. Heat the sauerkraut, flipping the mound a couple of times until warmed.
  2. Prepare the Bread with Cheese: Meanwhile, butter one side of each bread slice. Place the buttered side down on a heated grill pan. Top each slice with one slice of Swiss cheese. Allow the bread bottom to toast nicely without burning while the cheese begins to melt.
  3. Assemble the Sandwiches: On two slices of the grilled bread with melted cheese, pile on the hot corned beef. Add a generous amount of warm sauerkraut over the meat. If desired, spread your chosen sauce on top. Cover with the remaining two slices of grilled bread with cheese, buttered side out. Heat on low, covering with a lid if available, to ensure the sandwich fillings and cheese melt together.
  4. Serve: Cut each sandwich in half and serve immediately for a delicious, melty classic Reuben experience.
