Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the squash tots.
  2. Wash Squash: Rinse the outside of the kabocha squash thoroughly with warm water to clean off any dirt or residue.
  3. Prepare Squash: Cut the squash in half carefully and scoop out all the seeds from the center. Although you can peel the skin, it is not necessary as it softens well during roasting and adds great flavor.
  4. Chop Squash: Cut the squash flesh into 1-inch chunks to ensure even roasting and tender tots.
  5. Toss with Oil and Salt: In a mixing bowl, toss the squash chunks with 1 tablespoon of olive oil and sprinkle ½ teaspoon of sea salt evenly over them.
  6. Arrange on Baking Sheet: Spread the seasoned squash chunks in a single layer on a baking sheet to ensure crisp roasting.
  7. Roast: Place the baking sheet in the preheated oven and roast for 15 minutes. Then, remove the baking sheet to toss the squash pieces to promote even browning.
  8. Continue Roasting: Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the squash is tender and has developed a few caramelized brown spots.
