A comforting and easy shredded chicken sandwich recipe made with tender slow-cooked chicken, creamy condensed soup, and flavorful stuffing mix. Perfect for a quick weeknight meal or casual family gathering, served warm on hamburger buns.

Ingredients

Chicken Mixture

  • 3 pounds boneless skinless chicken breasts, thighs, or both
  • 21.5 ounces condensed cream of chicken soup (two 10.75 ounce cans)
  • ¼ to ½ cup chicken stock or broth, as needed

Stuffing

  • 6 ounces Stove Top Stuffing, chicken flavored (one box)

Instructions

  1. Combine Chicken and Soup: Place the chicken breasts and/or thighs in the crockpot. Pour the condensed cream of chicken soup over the chicken. Cover and cook on LOW heat for 3 to 4 hours until the chicken is fully cooked and easily shredded.
  2. Shred the Chicken: Using tongs or two forks, shred the chicken directly in the crockpot, breaking it apart into bite-sized pieces for easy mixing.
  3. Add Stuffing Mix: Stir the chicken-flavored Stove Top stuffing mix into the crockpot until combined. Cover again and continue cooking for another 20 to 30 minutes until the stuffing has softened and the mixture is heated through.
  4. Adjust Consistency: If the chicken mixture seems dry, add a splash or two of chicken stock or broth to moisten it before serving.
  5. Serve: Scoop the warm shredded chicken mixture onto hamburger buns and serve immediately for delicious shredded chicken sandwiches.

Notes

  • This recipe works well with either boneless skinless chicken breasts, thighs, or a combination of both according to personal preference.
  • Using dark meat will result in a richer, more flavorful sandwich, but white meat will also work fine.
  • Be sure to add chicken broth as needed to prevent the mixture from drying out during the final cooking phase.
