These Shrimp Stuffed Mushrooms are a savory and elegant appetizer featuring brown mushroom caps filled with a flavorful blend of minced shrimp, mushroom stems, onion, garlic, cream cheese, and panko breadcrumbs. Ingredients

Shrimp Mixture

  • 5 oz peeled and deveined shrimp (from 10 oz raw shrimp)
  • 14 oz brown mushrooms (stems separated from caps)
  • 2 oz onion, chopped
  • 1 tsp garlic, minced
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 0.5 oz cream cheese
  • 1.5 oz plain panko breadcrumbs
  • 2 tbsp parsley, chopped (divided: 1.5 tbsp and 0.5 tbsp)

Instructions

  1. Prepare the shrimp: Remove the heads, legs, tails, and shells from each shrimp. Devein by making a shallow cut along the back and removing the vein with a knife tip or toothpick. Wash them clean and pat dry.
  2. Prepare the mushrooms: Clean mushrooms gently with a dry cloth or paper towel. Snap off the stems and separate the caps and stems into two bowls. If washing, rinse lightly, dry immediately, and cook soon after.
  3. Blend shrimp: Place peeled and deveined shrimp into a food processor and blend until smooth.
  4. Blend mushroom stems: Add the mushroom stems to the food processor with the shrimp and blend until the mixture is a smooth light brown consistency.
  5. Make stuffing: Transfer the blended mixture to a bowl. Add 1.5 tbsp chopped parsley, chopped onion, minced garlic, unsalted butter, ground black pepper, salt, cream cheese, and panko breadcrumbs. Stir thoroughly to combine all ingredients evenly.
  6. Preheat oven: Heat your oven to 375°F (190°C) for about 5 minutes to prepare for baking.
  7. Stuff mushrooms: Line a baking tray with parchment paper. Spoon the shrimp stuffing into each mushroom cap carefully, filling them to create a slight mound.
  8. Bake: Place the tray on the middle rack of the oven and bake for 15 minutes until cooked through and lightly golden on top.
  9. Garnish and serve: Remove from oven, transfer the stuffed mushrooms to a serving plate, and sprinkle with the remaining 0.5 tbsp chopped parsley. Serve warm and enjoy!
