Ingredients

Chicken

  • 1 kilogram chicken drumsticks

Sauce

  • 1 40 gram packet French onion soup mix
  • 1 410 gram can apricot halves in juice
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornflour/cornstarch (optional, for thickening)

Instructions

  1. Brown the chicken: Heat the olive oil in a large frying pan over medium heat. Lightly season the chicken drumsticks with salt and pepper, then brown them on all sides for about 4–5 minutes to develop color and flavor.
  2. Prepare the sauce: Add the canned apricots with their juice, French onion soup mix, minced garlic, and soy sauce into the slow cooker. Stir well to combine all ingredients evenly.
  3. Combine chicken with sauce: Place the browned drumsticks into the slow cooker, turning them through the sauce to ensure each piece is well coated with the flavorful mixture.
  4. Cook the chicken: Cover the slow cooker and cook on low for 6 hours or on high for 3 hours until the chicken is tender and fully cooked through.
  5. Thicken the sauce (optional): Remove the chicken drumsticks and set aside. Mix the cornflour with 1 tablespoon of cold water to create a slurry, then stir this into the sauce. Cook on high for an additional 20 minutes with the lid slightly ajar to thicken the sauce.
