This Slow Cooker Brisket with Brown Sugar Rub is a flavorful, tender beef dish that cooks low and slow to perfection. Seasoned with a blend of brown sugar, chili powder, and spices, this brisket becomes melt-in-your-mouth delicious. Finished with a brush of tangy barbecue sauce, it’s an easy yet impressive meal perfect for cozy dinners or gatherings.

Ingredients

Beef Brisket

  • 1 (3-4 lb) beef brisket

Brown Sugar Rub

  • ¼ cup brown sugar
  • 3 teaspoons chili powder
  • 2 teaspoons seasoning salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper

Finishing

  • ½ cup barbecue sauce

Instructions

  1. Prepare the Brisket: Remove the brisket from its packaging and optionally trim the fat cap down to a thin layer for a better balance of flavor and fat.
  2. Make the Rub: In a small bowl, mix together the brown sugar, chili powder, seasoning salt, garlic powder, onion powder, and black pepper until well combined.
  3. Apply the Rub: Rub the spice mixture all over the brisket, coating it evenly. Place the coated brisket in a 5 to 7-quart slow cooker.
  4. Slow Cook: Cook the brisket on low heat for 7 to 8 hours, or until it is tender enough to pull apart easily with a fork.
  5. Finish and Serve: Remove the brisket from the slow cooker. Brush it generously with barbecue sauce. Slice the brisket against the grain to ensure tenderness. Optionally, place the sliced brisket on a baking dish, brush again with barbecue sauce, and broil for 4 to 5 minutes to create a crisp outer crust before serving.

Notes

  • Trimming the fat cap is optional but recommended for less greasy brisket.
  • Cooking times may vary depending on your slow cooker; check tenderness starting after 7 hours.
  • Slicing against the grain is crucial for tender slices.
  • If you prefer a crispy crust, broil the sliced brisket briefly after brushing with barbecue sauce.
  • This brisket is great served with classic sides like coleslaw, baked beans, or cornbread.
