Ingredients

Instructions

  1. Season the Meat: In a small bowl, combine kosher salt, granulated sugar, granulated garlic, onion powder, and Italian seasoning. Sprinkle this seasoning mixture evenly over all sides of the chuck roast pieces to thoroughly coat the meat.
  2. Cook the Meat: Place the sliced onion, pepperoncini rings, pepperoncini brine, and low-sodium beef broth into the base of a 6-quart slow cooker. Stir to combine these ingredients, then nestle the seasoned beef pieces on top. Spoon some of the pepperoncini/onion/broth mixture over the beef. Cover with the lid and cook on low for 8 to 9 hours, or on high for 6 to 7 hours, until the beef is very tender and easily shreds with a fork.
  3. Shred the Beef: Carefully remove the beef from the slow cooker onto a cutting board. Using two forks, shred the beef into bite-sized pieces. Return the shredded beef to the slow cooker and stir it into the cooking juices for extra flavor and moisture.
