Instructions

  1. Prepare the Pork: Trim the excess fat from the pork shoulder and cut it into 4 pieces. Generously season all sides with salt to enhance the flavor throughout the meat.
  2. Mix Slow Cooker Sauce: Combine the prepared salsa, chipotle chili, adobo sauce, ground cumin, smoked paprika, minced garlic, and 1 teaspoon of salt in the slow cooker. Stir well to create a flavorful sauce base.
  3. Cook the Pork: Add the halved onion and pork pieces into the slow cooker. Turn the pork to coat thoroughly with the sauce. Cook on low for 6-8 hours, or on high for 4 hours until the pork is tender and easily shreds.
  4. Shred the Pork: Remove the pork from the slow cooker and place it into a large bowl. Using two forks, shred the meat finely. Strain the cooking sauce to remove solids and skim off excess fat. Add enough sauce back to the shredded pork to keep it moist and flavorful.
