Tender Jersey Royal new potatoes are boiled, smashed, seasoned with smoked paprika, Cajun seasoning, and oregano, then roasted to golden perfection. Served warm with a refreshing, tangy dip, this recipe combines bold flavors with crunchy textures, ideal for sharing or pairing with your favorite meal.

Ingredients

Smashed Potatoes

  • 450g Jersey Royal new potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon Cajun seasoning
  • 0.5 teaspoon oregano
  • Flaky salt, to taste
  • 10g fresh parsley, diced

Lemon & Garlic Dip

  • 100g Greek yogurt
  • 1/2 lemon, juice and zest
  • 1 garlic clove, minced
  • Drizzle of olive oil (1 teaspoon)

Instructions

  1. Boil Potatoes: Add the potatoes to a pot of salted water and boil for 15-18 minutes until fork-tender. The potatoes should be soft enough to smash easily without falling apart.
  2. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 220°C (428°F). Line a baking sheet with parchment paper and brush it lightly with a little olive oil.
  3. Smashed Potatoes: Drain the boiled potatoes and spread them out on the lined baking tray. If any potatoes are too large, cut them in half. Using the bottom of a glass, mug, or potato masher, gently press each potato to flatten it while keeping it intact, creating cracks and rough edges for crispiness.
  4. Season Potatoes: Brush the smashed potatoes generously with the remaining olive oil. Sprinkle smoked paprika, Cajun seasoning, and oregano evenly over them, making sure the oil and seasoning get into all the cracks and edges.
  5. Roast Potatoes: Roast the potatoes in the preheated oven for 35-45 minutes until deeply golden and crispy on the edges.
  6. Make the Dip: While the potatoes roast, combine Greek yogurt, lemon juice and zest, minced garlic, and a pinch of salt in a bowl. Mix well and drizzle with olive oil before serving.
  7. Serve: Scatter the roasted potatoes with flaky salt and diced fresh parsley. Serve hot alongside the lemon garlic dip and enjoy immediately.

  • Use Jersey Royal or any small new potatoes for the best texture and flavor.
