These Soft Frosted Sugar Cookies are delightfully tender and flavorful, perfect for any occasion. Made with a combination of all-purpose flour and cornstarch for extra softness, they are baked to perfection and topped with creamy buttercream frosting and colorful sprinkles, making them visually appealing and irresistibly tasty.

Ingredients

Dry Ingredients

  • 3 cups all-purpose flour (spooned and leveled)
  • 2 tablespoons cornstarch (keeps the cookies soft)
  • 1 teaspoon baking powder (ensure it is fresh)

Wet Ingredients

  • 1 cup unsalted butter (softened to room temperature)
  • 1 cup granulated sugar
  • 1 large egg (room temperature)
  • 2 teaspoons vanilla extract (pure vanilla is best)

Frosting & Decoration

  • Buttercream frosting (amount as needed to frost cookies)
  • Rainbow sprinkles (for topping)

Instructions

  1. Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cornstarch, and baking powder thoroughly, ensuring an even distribution of ingredients to help keep the cookies soft and light.
  2. Cream Butter and Sugar: In a large bowl, beat the softened unsalted butter and granulated sugar using an electric mixer until the mixture becomes pale in color and fluffy in texture, indicating enough air has been incorporated.
  3. Add Egg and Vanilla: To the creamed butter and sugar, add the large room-temperature egg and vanilla extract. Continue beating until the ingredients are fully combined and smooth.
  4. Combine Wet and Dry: Gradually add the dry flour mixture to the wet ingredients while mixing on low speed. Mix just until the dough comes together, avoiding overmixing to prevent tough cookies.
  5. Roll and Cut Dough: On a lightly floured surface, roll the dough out to approximately one-quarter inch thickness. Use a round cookie cutter to cut shapes from the dough, transferring them to a prepared baking sheet.
  6. Bake Cookies: Preheat your oven to 350°F (175°C). Bake the cookies for 8 to 10 minutes. Remove them from the oven just before the edges start to brown to maintain a soft texture.
  7. Cool and Decorate: Allow the cookies to cool completely on a wire rack. Once cooled, frost each cookie generously with your preferred buttercream frosting and immediately sprinkle with rainbow sprinkles for a festive finish.

Notes

  • Spooning and leveling the flour helps avoid dense cookies by preventing over-measurement.
  • Cornstarch is key for soft and tender cookies; do not omit.
  • Use fresh baking powder for proper leavening.
  • Make sure butter is fully softened at room temperature for easier creaming.
  • Remove cookies from oven before edges brown to keep them soft rather than crisp.
  • Cooling cookies completely before frosting prevents frosting from melting.
  • Buttercream frosting can be homemade or store-bought depending on convenience.
