  • 1 cup chopped carrots
  • 6 small golden potatoes (quartered)
  • 8 oz fideos (thin angel hair pasta)

Liquids & Seasonings

  • 10 cups water
  • 2 tablespoons chicken bouillon paste
  • 1 teaspoon adobo seasoning (or to taste)
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • 1 bay leaf

Instructions

  1. Prepare the aromatics: Heat achiote oil in a pot over medium-low heat. Add diced onions, minced garlic, and sofrito, then slowly simmer for about 5 minutes until fragrant and softened.
  2. Add tomato sauce and seasonings: Stir in tomato sauce to introduce acidity and enhance color. Add adobo seasoning, dried oregano, and red pepper flakes, mixing well to combine flavors.
  3. Cook the salchichon: Add the prepared salchichon slices to the pot. Cook for approximately 7 minutes until the sausage fat begins to render down and the pieces brown slightly.
  4. Build the broth: Pour in 10 cups of water and stir in 2 tablespoons of chicken bouillon paste. Add the bay leaf, then bring the mixture to a rolling boil.
  5. Add vegetables and pasta: Once boiling, add chopped carrots, quartered golden potatoes, and fideos pasta to the pot.
  6. Simmer the soup: Reduce heat to low and allow the soup to gently simmer for 20 minutes or until the vegetables and pasta are tender and fully cooked.
  7. Serve and garnish: Remove the bay leaf, garnish the soup with fresh cilantro if desired, and serve hot alongside tostones, white rice, or sliced avocado for a complete meal.
