A delicious and hearty Southern Fried Cabbage and Sausage recipe that combines tender steamed cabbage with flavorful browned sausage and aromatic spices, perfect for a quick and satisfying 30-minute meal.

Ingredients

Sausage and Fat

  • 3 tablespoons unsalted butter (can substitute with bacon grease or duck fat)
  • 12 ounces pre-cooked andouille or kielbasa sausage links, sliced into rounds

Vegetables & Flavorings

  • 1 cup chopped yellow onion
  • 4 garlic cloves, finely minced
  • 2 teaspoons packed brown sugar
  • 1 medium-sized head of green cabbage (about 2 lbs), roughly chopped into pieces
  • 2 tablespoons apple cider vinegar (can substitute red wine vinegar)

Seasonings

  • 2 teaspoons Creole Cajun Seasoning (homemade or store-bought)
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Freshly chopped parsley for garnish (optional)

Instructions

  1. Brown the Sausage: In a large deep skillet or Dutch oven, heat the butter over medium heat. Once sizzling, add the sausage rounds in an even layer. Cook until golden brown, about 3-5 minutes per side. Transfer the browned sausage to a plate and set aside.
  2. Sauté Onion and Garlic: Add chopped onion to the pan and sauté until translucent and tender, about 2-3 minutes. Add garlic and stir with onion until fragrant, about 1-2 minutes.
  3. Add Brown Sugar: Stir in the brown sugar until it begins to dissolve and blends with the onion and garlic mixture.
  4. Cook the Cabbage: Add half of the chopped cabbage to the pan first (depending on pan size). Pour in the apple cider vinegar and stir carefully. Cover the pan with a lid and steam the cabbage until tender, about 3-4 minutes. Add remaining cabbage and continue cooking for another 3-4 minutes.
  5. Combine and Season: Return the cooked sausage rounds to the pan. Season the dish with Creole Cajun seasoning, ground nutmeg, and optional crushed red pepper flakes. Stir everything to combine fully and cook together for an additional 3-5 minutes.
  6. Adjust and Serve: Taste and adjust seasoning with more Creole Cajun seasoning if desired. Serve immediately, garnished with freshly chopped parsley if preferred. Enjoy your Southern Fried Cabbage and Sausage!
