Ingredients

Meats

  • 4-5 slices smoky bacon, cut into bite-sized pieces
  • 1 package andouille sausage, sliced

Vegetables

  • 1 medium onion, cut into chunks
  • 1 medium red bell pepper, cut into chunks
  • 1 large head of cabbage (6-7 cups), chopped
  • 2 cloves garlic, minced

Seasonings

  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the bacon: Heat a large 12-inch skillet over medium heat and add the diced smoky bacon. Cook until crispy, then transfer the bacon pieces to a paper towel to drain excess grease.
  2. Brown the sausage: In the same skillet, add the sliced andouille sausage and cook just until browned. Remove the sausage to a paper towel and drain some of the bacon grease from the skillet to reduce excess fat.
  3. Sauté onions and peppers: Add the chopped onions and red bell peppers to the skillet and cook just until they begin to soften, about 2-3 minutes.
  4. Add cabbage and seasonings: Reduce heat to medium-low and add the chopped cabbage, minced garlic, smoked paprika, Cajun seasoning, salt, black pepper, and red pepper flakes if using. Stir well to combine all ingredients.
  5. Cook cabbage: Continue cooking the cabbage mixture for 5-6 minutes, tossing or stirring every minute or so, until the cabbage begins to wilt and softens.
  6. Combine and serve: Return the cooked bacon and sausage to the skillet, toss everything together thoroughly, and serve warm.

Notes

  • Use authentic andouille sausage for the best smoky flavor, or substitute with another smoked sausage if unavailable.
  • Adjust the amount of red pepper flakes to control the heat level.
