Ingredients

Meat

  • 3-4 pounds pigs feet

Seasonings & Spices

  • 2 tablespoons white vinegar (or red wine vinegar)
  • Kosher salt
  • 1 packet of Sazon
  • 2 chicken bouillon cubes or 2 teaspoons of chicken bouillon powder
  • 2 tablespoons Soul Dust seasoning
  • 1 teaspoon red chili flakes (crushed red pepper)
  • 1 teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce

Vegetables

  • 1 medium red onion, sliced
  • 1 red bell pepper, sliced
  • 1 jalapeno, sliced (optional)
  • 3 cloves garlic, chopped

Liquids

  • 4-6 cups water
  • Red wine vinegar (optional, for finishing)
  • Hot sauce (for serving)

Instructions

  1. Clean the Pigs Feet: Place the pig trotters in a large mixing bowl and cover them with cold water. Add the vinegar, then scrub the pigs feet thoroughly with kosher salt and a scrub brush, paying close attention between the toes. Use a butter knife to scrape off any excess hair. Discard the dirty water and rinse the pigs feet well. Transfer them to the slow cooker.
  2. Add Seasonings: To the slow cooker with the pigs feet, add the Sazon seasoning packet, chicken bouillon cubes or powder, Soul Dust seasoning, red chili flakes, smoked paprika, and Worcestershire sauce. Stir well to evenly coat the pigs feet in the seasoning mixture.
  3. Prepare and Add Vegetables: Slice the red onion, red bell pepper, jalapeno (if using), and chop the garlic cloves. Add all these vegetables to the slow cooker on top of the seasoned pigs feet.
  4. Add Water and Cook: Pour 4 cups of water into the slow cooker, cover it, and cook on high for 4-5 hours or on low for 6-8 hours. The pigs feet should become tender but still maintain their shape and not fall off the bone. Test doneness by ensuring the skin breaks away easily and can be cut with a fork.
  5. Finish and Serve: Once cooked, add a splash of red wine vinegar and a few dashes of hot sauce to the slow cooker to finish the dish, if preferred. Remove the pigs feet carefully and serve with your favorite sides and extra hot sauce if desired.

Notes

  • Be sure to thoroughly clean the pigs feet to remove any hair or impurities before cooking.
  • The jalapeno is optional; omit if you prefer less heat.
  • You can adjust the amount of water to ensure the pigs feet are mostly submerged but not swimming in liquid.
  • Cooking times may vary depending on your slow cooker model and size of pigs feet.
  • Splashing red wine vinegar at the end adds acidity and brightness to balance the rich flavors.
