Ingredients

For Sugared Cranberries

  • ¾ cup organic cane sugar, divided
  • ½ cup water
  • 6 oz cranberries, rinsed

For Sparkling Cranberry Mocktail

  • Organic cane sugar (for rimming the glass)
  • 5 oz cranberry juice, unsweetened, chilled
  • 5 oz raspberry cranberry sparkling water, chilled (or sparkling water of choice)
  • Sugared cranberries, for garnish (optional)

Instructions

  1. Prepare simple syrup: Place a cookie rack on a baking sheet. In a small saucepan, combine ½ cup organic cane sugar and ½ cup water. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar completely dissolves into a syrup.
  2. Coat cranberries in syrup: Remove the saucepan from heat and gently stir in the rinsed cranberries, coating them evenly with the warm simple syrup.
  3. Dry cranberries: Using a slotted spoon, transfer the coated cranberries to the cookie rack placed over the baking sheet and allow them to dry for 2 hours.
  4. Sugar coat cranberries: After drying, place the remaining ¼ cup of organic cane sugar into a medium-sized bowl. Spoon the slightly sticky cranberries into the sugar and stir gently to coat all surfaces in sugar crystals.
  5. Final drying: Return the sugared cranberries onto the cookie rack and allow them to dry for an additional hour until they harden and sparkle.
  6. Rim the glasses: Moisten the edges of your serving glasses with water, then dip the rims into organic cane sugar to coat them evenly, creating a festive sugared rim.
  7. Assemble the mocktails: Pour 2.5 oz of chilled unsweetened cranberry juice into each glass.
  8. Add sparkling water: Top each glass with 2.5 oz of chilled raspberry cranberry sparkling water or your preferred sparkling water to add effervescence and balance the tartness.
