Ingredients

For the Meatballs

  • 1 pound ground lamb
  • 1 egg, lightly beaten
  • ½ cup panko or other dried breadcrumbs
  • 1 clove garlic, minced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons chopped parsley
  • 1 tablespoon toasted sesame seeds
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ½ teaspoon ground cardamom
  • ¼ teaspoon black pepper

For Cooking

  • 1 tablespoon vegetable oil for greasing the pan (or use parchment paper)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to get it ready for baking the meatballs.
  2. Prepare the baking pan: Lightly grease a baking pan or dish with about one teaspoon of vegetable oil or line it with parchment paper to prevent sticking.
  3. Mix the ingredients: In a large bowl, combine the ground lamb, beaten egg, panko breadcrumbs, minced garlic, chopped cilantro and parsley, toasted sesame seeds, ground cumin, coriander, salt, cardamom, and black pepper. Mix everything together thoroughly using your hands until well blended.
  4. Form the meatballs: Use a medium cookie scoop or your hands to portion out golf ball-sized portions (about 2 generous tablespoons) of the meat mixture. Gently roll each portion into a smooth ball and place them evenly spaced in the prepared baking pan.
  5. Bake the meatballs: Place the pan in the oven and bake for 15 to 20 minutes, or until the internal temperature reaches 165°F (74°C). Approximately 10 minutes into baking, carefully shake the pan and use a spatula to loosen any meatballs sticking to the pan. Continue baking until fully cooked.
  6. Serve warm: Remove the meatballs from the oven and serve immediately for the best flavor and texture.
