This Spicy Jalapeño Cheddar Tuna Melt combines the rich flavors of yellowfin tuna with a spicy kick from fresh jalapeños and sharp cheddar cheese. Enhanced with mayo, yogurt, Dijon mustard, and hot sauce, this melt is toasted to perfection under the broiler, resulting in a melty, flavorful sandwich that’s quick and easy to prepare—perfect for a satisfying lunch or light dinner.

Ingredients

Tuna Mixture

  • 1 (5 ounce) can yellowfin tuna, drained (preferably packed in olive oil)
  • 2 tablespoons finely diced green onion
  • 2 tablespoons diced jalapeño
  • 1 tablespoon mayonnaise
  • 1 tablespoon yogurt (or substitute with mayonnaise)
  • 1 teaspoon grainy Dijon mustard
  • 1 teaspoon hot sauce
  • Freshly ground salt and pepper, to taste

Assembly

  • 2 slices of your favorite bread (thicker sliced bread is recommended)
  • 2 slices sharp cheddar cheese (or your favorite cheese)
  • Extra jalapeño slices, optional

Instructions

  1. Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, finely diced green onion, diced jalapeño, mayonnaise, yogurt, grainy Dijon mustard, hot sauce, and salt and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  2. Toast the Bread: Toast the slices of bread according to your preference to achieve a slightly crispy texture that will hold the tuna melt well.
  3. Assemble the Sandwich: Evenly spread the prepared tuna mixture over each piece of toasted bread. Place a slice of sharp cheddar cheese on top of each. Add extra jalapeño slices if you desire an additional spicy kick.
  4. Broil to Melt Cheese: Place the assembled open-faced sandwiches under the broiler for about 2 minutes, or until the cheese is fully melted and bubbly. Keep a close watch to avoid burning.
  5. Serve and Enjoy: Remove from the broiler carefully and serve immediately for the best flavor and texture.

Notes

  • You can substitute the yogurt with extra mayonnaise if you prefer.
  • Adjust the amount of jalapeño and hot sauce to your preferred spice level.
  • Use thicker slices of bread like sourdough or country loaf for better texture and flavor.
  • Keep a close eye during broiling to prevent the cheese from burning.
  • This recipe works well with other types of cheese, such as pepper jack or mozzarella.
