These SunButter Energy Bites are a quick and nutritious snack made with wholesome ingredients like rolled oats, seeds, raisins, and sunflower seed butter. Naturally sweetened with maple syrup and studded with chocolate chips, they are perfect for an energy boost any time of day.

Ingredients

Dry Ingredients

  • ½ cup old fashioned rolled oats
  • 1 Tablespoon flaxseed
  • 1 Tablespoon chia seeds or hemp seeds
  • 2 Tablespoons raisins
  • 2 Tablespoons chocolate chips
  • Pinch of sea salt

Wet Ingredients

  • ½ cup sunflower seed butter
  • 1 Tablespoon maple syrup

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the rolled oats, flaxseed, chia or hemp seeds, raisins, chocolate chips, and a pinch of sea salt. Stir these dry ingredients well to distribute them evenly.
  2. Add Wet Ingredients and Combine: Add the sunflower seed butter and maple syrup to the dry mixture. Use a spoon or your hands to thoroughly mix everything until all ingredients are well incorporated and you have a sticky, cohesive mixture.
  3. Form the Energy Bites: Scoop out portions of the mixture and roll them between your palms to form small, bite-sized balls. You should be able to make about 11 to 12 balls from this batch.
  4. Store Properly: Place the formed energy bites on a plate or tray and refrigerate them for up to 1-2 weeks to keep fresh. Alternatively, you can freeze them for up to 3 months for longer storage.

  • You can substitute raisins with other dried fruits like cranberries or chopped dates.
