A flavorful and easy Teriyaki Noodles with Tofu recipe that combines pan-fried tofu with tender noodles tossed in a homemade teriyaki sauce, garnished with sesame seeds and green onions. Perfect for a quick vegetarian Asian-inspired meal.

Ingredients

Noodles and Tofu

  • 8 oz noodles (soba, ramen, or spaghetti)
  • 14 oz firm tofu (pressed and cubed)
  • 2 tbsp vegetable oil
  • 1 cup chopped green onions
  • 1 tbsp sesame seeds

Teriyaki Sauce

  • ½ cup soy sauce
  • ¼ cup water
  • 3 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp grated garlic
  • 1 tbsp grated ginger
  • 1 tbsp cornstarch
  • 2 tbsp water (for cornstarch slurry)

Instructions

  1. Cook Noodles: Cook the noodles according to the package instructions until al dente. Drain them well, rinse under cold water to stop cooking, and set aside to keep from sticking.
  2. Make Teriyaki Sauce: In a saucepan, combine soy sauce, water, brown sugar, rice vinegar, grated garlic, and grated ginger. Heat and bring the mixture to a simmer. In a separate small bowl, whisk cornstarch with 2 tablespoons of water to make a slurry. Pour this slurry into the simmering sauce, stirring continuously until the sauce thickens to a glossy consistency, about 3 to 5 minutes. Remove the sauce from heat.
  3. Cook Tofu: Heat vegetable oil in a skillet over medium-high heat. Add the cubed tofu and pan-fry, turning occasionally, until golden brown on all sides, approximately 8 to 10 minutes.
  4. Toss Noodles and Tofu: Add the cooked noodles back into the skillet with the tofu. Pour the prepared teriyaki sauce over the mixture and toss everything together carefully, ensuring the noodles and tofu are evenly coated. Warm through for an additional 1 to 2 minutes on medium heat.
  5. Serve: Plate the teriyaki noodles and tofu, then garnish with sesame seeds and additional chopped green onions if desired. Serve warm for best flavor.

  • Press tofu before cooking to remove excess moisture and help it brown better.
  • Use any noodles you prefer, such as soba, ramen, or spaghetti.
  • Adjust the sweetness of the sauce by adding more or less brown sugar.
